Guided by an expert sommelier, you will taste six carefully selected labels crafted from native grape varieties. Among them are some of Puglia’s most renowned wines, including Primitivo di Manduria, Negroamaro, Malvasia Nera, and Nero di Troia. Characterized by depth, structure, and intense aromatic profiles, these wines embody the strength and richness of the Apulian terroir.

The tasting is complemented by a curated selection of local delicacies, thoughtfully paired to enhance each wine’s character. Slow gestures and a handful of simple ingredients — even today, the tradition of handmade pasta remains an essential part of Salento’s culinary heritage. Made from just water and durum wheat flour, each shape is crafted through skilled movements of the fingers, sometimes with the help of a thin metal wire. Among the region’s most iconic pasta varieties are orecchiette, sagne, and minchiareddri, perfect for creating delicious vegetable-based first courses.

Guided by our chef, during the cooking class you will learn the traditional recipe for homemade Apulian pasta in an authentic and charming setting. Prickly Pear Harvesting: A Symbol of Salento

The countryside of Southern Italy and Salento is enriched by the vibrant presence of prickly pear cacti, now a true symbol of this land. Their juicy fruits once sustained farmers during long, sun-drenched days working in the fields.

Naturally sweet in flavor, prickly pears are also highly beneficial for health: rich in fiber, vitamin C, minerals, and antioxidants, they are a true concentrate of wellbeing.

During the flowering and harvesting season, from July through the end of August, we gather prickly pears in our garden. Equipped with protective gloves or using a traditional tool known as a coppo, we carefully reach even the highest fruits. Once collected, the fruits are immersed in water and gently swirled to release their tiny spines, preparing them to be enjoyed at their best.

Tarantism: The Ancient Ritual to Heal the Tarantula’s Bite

Salento is inextricably linked to the phenomenon of Tarantism, a subject studied by scholars, anthropologists, and musicologists from around the world. The earliest historical references to Tarantism and to what became known as musical exorcism date back to the 14th century, appearing in medical treatises that identified a specific type of music as the antidote to the venom of the tarantula. By the 18th century, Tarantism began to be associated with illness, and the trance states of the so-called tarantate were interpreted as forms of mental disorder.

The most thorough analysis of Tarantism is attributed to the research team led by anthropologist and historian of religions Ernesto De Martino, who conducted pioneering field studies on the phenomenon. Through these investigations, Tarantism was defined as a musical, choreutic, and chromatic form of exorcism.

The ritual primarily involved adolescent and adult women, often troubled by emotional or relational distress, who were believed to have been bitten by an imaginary spider during the harvest season. The venom symbolized possession; it was thought to resurface year after year. For this reason, ethnologists speak of adorcism — a form of negotiated coexistence with the entity, which does not permanently leave the body but reappears periodically.

During this experience, we will recount the origins and evolution of Tarantism, a thousand-year-old tradition among the most ancient in Italy. Special focus will also be given to the original meaning of Pizzica — a form of folk music and therapeutic dance, performed individually or collectively, rooted in the ancient healing rite of the tarantate and their annual pilgrimage on June 29th to the Chapel of Saint Paul in Galatina.
